Celebrate The Fourth With Gershwin and Dianne's Favorite Side Dish

What goes with the 4th of July?  Musically speaking, Rhapsody in Blue is a must hear, and to eat?

Dianne's All-American Potato Salad (Always a hit, if I say so myself!)

Boil the potatoes until cooked al dente. (No need to peel them, most of the skin will come off on its own.)

Drain the potatoes and add in some vinaigrette to coat, plus half a finely chopped red onion.

Allow to cool.

Add in:

Chopped dill pickles

Chopped hard-boiled egg (1 or 2)

A little mustard and mayo to taste

Salt and pepper

Mix gently so as not to create mashed potatoes!

Chill and serve.
